The Polit Family Farm in Maxwell, CA produces delicious organic extra virgin olive oil, including the Arbequina variety we use.


Water may not come to mind when people think of what makes focaccia, but water is an essential ingredient (to life!). We don’t use any fancy bottled water because the City of Bend’s water is really good. It comes from the Bend Municipal Watershed in the Deschutes National Forest. Here’s a good illustration of our water’s journey.

We were lucky to meet Mark and visit his basil farm, EverSummer Gardens, in the Dalles. He grows amazing organic Genovese basil in his greenhouse perched right above the Columbia.
